Chef Chat: Behind the New Afternoon Tea at Great Scotland Yard Hotel

Afternoon Tea at Great Scotland Yard Hotel is a truly unique offering in London. Inspired by the hotel’s fascinating history as the former headquarters of the Metropolitan Police, the new Afternoon Tea combines elegant pastries with playful storytelling, taking guests on a journey through Victorian London with plenty of unexpected twists along the way.

We sat down with the hotel’s Executive Pastry Chef, Veronica Garrido Martinez, to find out where the inspiration came from, how the menu was created, and why creating a memorable Afternoon Tea experience is just as important as creating beautiful cakes.

“The inspiration of the Afternoon Tea is the great art of investigation,” she explained. “Throughout the hotel there are so many elements that remind you of the Metropolitan Police and Victorian London.”

Rather than focusing on the darker side of Victorian history, she wanted to capture the atmosphere of foggy London streets and famous detectives in a way that felt fun, elegant and full of character. Every cake has been designed to tell part of that story, with little references hidden throughout the menu for guests to discover.

It’s a concept that fits perfectly with Great Scotland Yard Hotel, where history is woven into every corner of the building.



Each sweet creation has a story behind it, starting with one of the prettiest pastries on the stand – an edible envelope. The envelope is a delicate Earl Grey cake filled with Earl Grey ganache and pear jelly. It’s wrapped in marzipan, lightly torched and finished with an edible wax seal, inspired by the sealed letters used during investigations. It’s a simple idea, but one that instantly ties into the theme while celebrating one of the most classic Afternoon Tea flavours.

Another pastry, The Investigator, features a tiny moustache and monocle, a playful nod to Victorian detectives and the hotel’s policing heritage. The attention to detail continues with a miniature pocket watch, inspired by the spectacular clock installation hanging in the hotel’s lobby ceiling. Guests who look up when they arrive will spot its intricate gears suspended above them.

Veronica also wanted to include a subtle reference to Alice in Wonderland. The pocket watch is set to six o’clock: the Mad Hatter’s tea time - because, as she says, any time is a good time for Afternoon Tea!

One of the most exciting moments comes after the savoury course, when guests are served a pre-dessert before the scones and cakes. Inspired by autumn, the course features a rich spiced hot chocolate and tells the story of the infamous Forty Elephants - London’s all-female gang of thieves - The idea is that a diamond has been stolen.
The hot chocolate is poured over the dessert at the table, slowly melting away the top layer and revealing the hidden “diamond” inside. It’s interactive, theatrical and something that guests genuinely remember long after they’ve finished their Afternoon Tea. It’s also a lovely balance of flavour, with warming spices and chocolate making it feel cosy and indulgent.

No Afternoon Tea would be complete without scones, but Great Scotland Yard Hotel has given this course its own signature twist. Instead of the traditional plain and fruit scones, guests are served a plain scone dusted with vanilla sugar alongside a cinnamon bun scone. It’s a simple change, but one that feels instantly familiar and comforting. The cinnamon bun flavour brings something a little different to the table while still feeling perfectly suited to an Afternoon Tea.

Talking to the Executive Pastry Chef, it’s clear that every element on the menu has been carefully considered.
She explained that when she creates pastries, she always thinks about texture as well as flavour. A cake should never be just soft or just creamy - it needs contrast, whether that’s something crunchy, silky or crisp, to make every bite more interesting.

Seasonal ingredients are another important part of the creative process, with flavours changing depending on the time of year and the story she wants the menu to tell.

Creating a new Afternoon Tea isn’t something that happens overnight either. She told us it can take around a month of testing ideas, refining recipes and asking for feedback before the final menu comes together. While guests see a beautifully presented cake stand arrive at the table, there’s a huge amount of work happening behind the scenes.

Veronica said pastry chefs are incredibly creative people, often imagining a design long before it exists. The challenge comes when that one perfect cake has to be recreated hundreds of times. “You make one or two and think, ‘That looks fantastic.’ Then you realise you have to make 300 a week!” It’s a side of Afternoon Tea that most guests never see: the precision, patience and craftsmanship needed to make every pastry look exactly as it should.

More than anything, the Executive Pastry Chef hopes guests leave with a smile.She said the best part is hearing people say they’ve had such a wonderful time together and that the experience feels memorable. That’s always the final goal.

And that’s exactly what this new Afternoon Tea achieves. It celebrates the history of Great Scotland Yard Hotel in a way that feels imaginative without being over the top, combining elegant flavours with thoughtful storytelling and a few surprises along the way.

From the fried chicken as a canape along with your savoury sandwiches and the deliciously playful pocket watch to the hidden diamond revealed beneath warm spiced hot chocolate and the comforting cinnamon bun scone, every course feels like another clue in the story.
