Review: Cherry Blossom Afternoon Tea at The Milestone Hotel
The Cherry Blossom Afternoon Tea at the The Milestone Hotel & Residences is a thoughtfully composed seasonal offering that captures the quiet refinement of spring in the most beautiful floral way. Available only until 3rd May, it reflects both the fleeting beauty of cherry blossom season and the hotel’s longstanding commitment to traditional British hospitality.

From the outset, the setting establishes the tone. Overlooking Kensington Palace, the hotel’s interiors are defined by polished wood, soft lighting, and carefully preserved period details. There is a sense of intimacy rather than grandeur for its own sake - an atmosphere that lends itself particularly well to Afternoon Tea, where pace and comfort are as important as presentation.

The structure of the Cherry Blossom Afternoon Tea remains faithful to tradition with a Japanese touch. A selection of finely prepared finger sandwiches opens the experience, the chicken sandwich is now a katsu, and the smoked salmon has a nori and dill creme fresh. These touches to traditional British flavours work well and provide a measured and elegant introduction.
The scones, served warm, form the centrepiece of the savoury progression. Both plain and fruit varieties are accompanied by Cornish clotted cream and preserves, and are notable for their consistency of texture: light, yet sufficiently structured. This element of the Afternoon Tea feels reassuringly traditional, anchoring the more seasonal aspects of the menu.

It is in the pâtisserie selection that the cherry blossom theme is most clearly expressed. The pastries are visually delicate, often presented in soft pastel tones, and characterised by a restrained use of floral and fruit notes. Rather than overt sweetness, there is an emphasis on balance—citrus, berry, and subtle blossom flavours are employed to create a sense of lightness appropriate to the season. The result is a collection that is cohesive without appearing overly stylised.
Curated in collaboration with Paula Stakelum, whose work at Ashford Castle has earned international recognition, the selection reflects a precise balance between classical pâtisserie technique and contemporary flavour composition.
Each element is conceived not merely as a sweet conclusion, but as part of a cohesive progression—light, nuanced, and distinctly spring-like in both flavour and form.

The Rhubarb Aerated Cream is perhaps the most emblematic of the season. The gentle sharpness of rhubarb is softened through aeration, resulting in a texture that is notably light, almost ethereal. This is complemented by Opalys white chocolate and a dulce crémeux.
The Pink Grapefruit Tart offers a more defined citrus profile. Its brightness is clean and deliberate, with the slight bitterness of grapefruit providing complexity. Toasted almond grounds tart from becoming overly sharp. In contrast, the Miso Macaron introduces a more unexpected dimension. The savoury depth of miso is paired with peanut and raspberry, creating a layered profile that moves between umami, nuttiness, and fruit acidity. The Japanese Rollcake provides a gentle conclusion. Infused with sencha tea and paired with cherry, it echoes the overarching cherry blossom motif without overstating it. The sponge is notably fine in texture, and the flavours are understated making it a fitting end to the sequence.
Taken together, these pastries demonstrate a clear intention: to interpret the idea of Cherry Blossom Afternoon Tea through flavour, texture, and balance rather than visual novelty alone. The result is a collection that is refined, technically accomplished, and entirely in keeping with the composed elegance of the experience as a whole.

The tea selection itself is extensive, allowing for careful pairing across the courses, while optional Champagne service provides an additional layer of occasion for those who wish to elevate the experience further. Service throughout is attentive and composed, maintaining a level of discretion that allows the Afternoon Tea to unfold without interruption.
Overall, the Cherry Blossom Afternoon Tea at the The Milestone Hotel & Residences is distinguished as it offers a considered interpretation of Afternoon Tea that aligns seasonality and culture with tradition, resulting in an experience that is both polished and memorable.
